Dinner this week.

I have tried some AMAZING new recipes this week and wanted to share.

The first was FRENCH FRIED ONION CHICKEN AND GREEN BEAN CASSEROLE and oh boy was it AMAZING.  I think it's one of my husbands new favorite dinners!

The next one we tried was from Darius's cousin, Mary. It's simply called- Creamy Chicken Rolls. They were so so good!
Here is the recipe:

1 (3 ounce) package cream cheese, softened
  • 4 tablespoons butter or margarine, melted, divided
  • 1 tablespoon minced chives
  • 2 tablespoons milk
  • 1/4 teaspoon salt
  • 1/8 teaspoon garlic pepper
  • 2 cups cubed cooked chicken
  • 2 (8 ounce) cans refrigerated crescent rolls
  • 1 cup crushed seasoned stuffing
  • 2 cans cream of chicken soup

Directions

  1. In a mixing bowl, beat cream cheese, 2 tablespoons butter, chives, milk, salt and garlic pepper until smooth. Stir in the chicken. Unroll crescent roll dough and separate into sixteen rectangles; press perforations together. Spoon about 1/2 cup chicken mixture onto the center of each rectangles. Bring edges up to the center and pinch to seal. Brush with remaining butter. Sprinkle with stuffing lightly pressing down. Bake squares at 350 degrees F for 20-25 minutes or until golden brown. Pour heated cream of chicken soup over and serve. 


Tonight I made CREAMY CHICKEN PASTA WITH SUN DRIED TOMATOES AND GREEN BEANS. It had very very good flavor, but next time I would not combine the noodles with the rest of the mixture until serving it actually ON THE PLATE- it ended up making the noodles TOO soft when I added them and the sauce to the crock pot about 5-10 minutes before serving. I would also leave out the green beans and maybe sub some chopped onion or spinach. Everyone enjoyed it though, I would definitely eat it again!


Tomorrow night I'm going out with my girls for dinner and Friday is date night with my hubby! After that I plan on trying a recipe for French Dip Subs with Glazed Carrots! (Not my cup of tea, but Darius and Dad will love it).
