Some New Recipes


Darius and I have been trying out some new healthy recipes we have found. We cleaned out the junk food and started the healthy food only habit now for a healthier mommy & daddy and so its a normal routine by the time Lilah is ready to eat "real" food. Only the best for my baby girl :)


Here are a few that we have tried so far and LOVED-
Banana Tortilla (Snack or Breakfast)

Ingredients:

Whole Grain or Wheat Tortilla
Peanut Butter (we prefer crunchy)
Cinnamon
Banana
Take the tortilla and spread peanut butter on the inside, sprinkle cinnamon on top of the peanut butter if desired. Place banana on the edge of the tortilla and
roll up. Cut in half for easier eating.

These are so delicious! They are quick and easy for a snack on the go or breakfast before work. You can vary the ingredients adding sugar free jelly or
raisins whatever you like.





Personal Bbq Chicken Pizzas (Lunch or Dinner)

There are no measurements because it is a matter of personal preference

Ingredients:

Whole Grain or Wheat Tortilla
Bbq Sauce
Low Fat Shredded Cheese
Red Yellow or Green Peppers -Chopped
Cooked Chicken- Chopped

Warm up your oven to 375. Lay your tortillas on a cookie sheet, spread some BBQ sauce on top. Then add your toppings, Then cook them for about 10-12 minutes until the edges of your tortilla are crispy and the tops of your pizzas are golden brown. If you have two cookie sheets in the oven at the same time, switch their placement half way through the cooking time. Cool them for a minute, cut, and serve! You could really get creative with your toppings. I'm going to make a chicken and spinach pizza next!


Chicken Kabobs

1 lb. chicken breasts
3 TBSP olive oil
1.5 TBSP red wine vinegar
1 lime, juiced
1 tsp chili powder
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp sea salt
1/8 tsp pepper
Zucchini
Squash
Plum Tomatos
Skewers

Wash and cut your chicken into cubes. Put them in a large ziplock bag (or shallow dish). Whisk seasonings, juice, oil and vinegar ingredients for marinate together in a bowl and pour over the chicken. Let marinate in the fridge for 2-3 hours. Chop Zucchini and Squash into cubes. Soak Skewer in Lime Juice for a couple minutes to prevent burning and peeling. Skewer chicken and veggies on kabob sticks and grill on BBQ over med- high heat for 10- 15 minutes. If a grill isn't an option you can do these on a skillet or griddle.
